Mexican Frito Salad


Mexican Frito Salad
4-6 servings

1 pound ground beef
1 can Ranch Style beans
1 cup shredded sharp cheddar cheese
1/4 cup finely diced red onion
1 tomato, chopped
1/2 head of iceberg lettuce, shredded
1/2 small bag fritos
Catalina salad dressing, to taste

Cook ground beef; drain, season and place in a large bowl to cool. Add beans, cheese, onion, tomato, lettuce and fritos to bowl. Mix thoroughly. When ready to serve add dressing and toss to coat. Enjoy!

My mom made this all the time when I was growing up. I had forgotten about the catalina dressing!

I make a salad similar to this and love it! Could you please tell me what ranch style beans are?

Hi Jelli Bean - I was wondering if anyone would ask about the beans! ;-) I think they might be a regional thing. "Ranch Style" is a brand name. The can is black. The are just seasoned, canned beans with a western, bbq type flavor - a unique taste. If you can't find them pinto beans would work just fine. :-)

We substitute Doritos for the Fritos and add taco seasoning to the beef. It's a family favorite. But don't make to much because it can't be saved.
